The Label Speaks

There is a joyous and festive atmosphere at one of our Taproom pubs during the holiday season. The curmudgeonly scrooge in the foreground, however, is having none of it. He just wants to belch out to everyone a surly Bakayaro! He truly is in a sour, insolent and obstinate mood. The kanji characters in the label, henkutsu (偏屈), further express this.

’Wet’ hops refer to the hop cone in its most natural zero-processed form. Wet hops, as the name implies, are not dried and thus are not suitable for long-term storage. Our Shuzenji grown hops find their way into our brew kettle literally within hours of harvest. If you love the bright and fruity character derived from hops used in their freshest form, this Wet Hop Harvest Ale is for you!

‘Wet’ hops (often called ‘Fresh’ hops) refer to hops just harvested in the field that are used as-is with no drying or further processing.  As such, they must be used by the brewer immediately (ideally within hours of harvest) or else the high-moisture content wet hops will begin to rot. Wet hops represent the hop cone in its most natural form. We grow three varieties of hops on the grounds of our Baird Brewery Gardens Shuzenji property: Cascade, Shinshuwase & Chinook. We introduced these hops to our brew kettle literally within hours of harvest. The hop character is wonderfully fresh and piquantly fruity. Craft beer has entered the age of increased usage of locally grown and harvested ingredients. We are happy to be brewery players in this next frontier of the craft beer journey.
