There is a joyous and festive atmosphere at one of our Taproom pubs during the holiday season. The curmudgeonly scrooge in the foreground, however, is having none of it. He just wants to belch out to everyone a surly Bakayaro! He truly is in a sour, insolent and obstinate mood. The kanji characters in the label, henkutsu (偏屈), further express this.

Although we have planted a handful of varieties, to date only two (Cascade & Shinshuwase) are growing well and one (Chinook) moderately well in our latitudinally challenged location. We grow these hops organically, adding no chemical fertilizers, herbicides, insecticides, etc. The character of our hops tend to be mild, softly fruity and earthy. The image we have of the beer we are attempting here is a sort of Session IPA. Hop growing at our brewery is a real labor of love for our entire team.
